Caveman’s Grill in Dacono wants to offer something different

    DACONO — Mastodon is not on the menu at Caveman’s Grill.
    But the burgers and wings offered at the new Dacono restaurant seem just as novel to the Carbon Valley area.
    Owner Jason Medina rightly recognized that some variety was needed for residents in search of a family-friendly eatery.
    “I wanted to break the monotony of the restaurants around here and offer something different,” Medina said. “When families are trying to find someplace to eat, I wanted there to be something different to choose from.”
    Medina, 35, opened Caveman’s Grill Dec. 7, at 500 Eighth St., Unit B. This was the location of the old Santiago’s Mexican Restaurant, which moved to Frederick last year.


    The menu is primarily wings and burgers and provides quick low cost food that is filling and paired with quick service with quality food.
    “It’s always been my pursuit to open a restaurant and run my own business,” Medina said. “But first, the opportunity arose to open a liquor store and that’s what I did.”
    He runs the liquor store next door to Caveman’s Grill, and for Medina, this isn’t a random pairing of businesses.
    “I wanted to have both businesses next to each other because I want to provide delivery service for alcohol and food,” Medina said. “I want to reduce DUI’s. The big reason I feel strongly about this is that I was with State Patrol and I worked fatal accidents. That background experience convinced me there was a need to help people throw a party in a safe matter.”
    To reach this goal of helping the community stay safe for football games and social gatherings, Caveman’s Grill offers delivery to the Dacono, Firestone and Frederick area.
    To encourage people to take advantage of this service, Medina wanted to make sure that residents understand they don’t have to order a certain amount of food to qualify for delivery.
    “We do away with minimum orders,” Medina said. “And there’s no delivery charge for senior citizens.”
    There has been a very positive reaction from seniors in the Carbon Valley area to this service, because even driving a small distance for dinner can be difficult or impossible.
    “It’s been humbling,” Medina said. “Seniors have thanked me because they don’t have to spend $20 on dinner to get delivery. And some are stuck at home and they are only feeding themselves for dinner that night, and they needed a new option.”
    The name for the restaurant was originally going to be the Cave, because of the man-cave appeal of the menu. But ultimately, Medina went with the catchier Caveman’s Grill, which captures the spirit of discovery in the menu.
    “To keep things moving, I’m going to change the sauce every week, and show some of my culinary skills,” said Medina, who started cooking in his grandmother’s San Luis restaurant when he was 10 years old. “This week was peanut butter and jelly wings.”
    Medina, a Colorado native, has plans to expand the delivery services to the larger area.
    “I’m shocked word got out as far as it has. I didn’t do any marketing, and I have people coming as far as Brighton, and I’m pleasantly surprised,” Medina said. “I would like to expand to small town areas – to add delivery in Fort Lupton would be a natural step. I have a ton of people asking for that. Maybe in the  beginning of 2012.”
